Tween 80 Polysorbate 80 is an amber oily liquid with a relative density of 1.00±0.05, a viscosity of 0.40~0.60Pa·s (25°C), a flash point of 288°C, and an HLB value of 10.0. Soluble in mineral oil, corn oil, Chemicalbook cellosolve, ethanol, cottonseed oil. It is also soluble in 5% tried sulfuric acid, sodium sulfate and aluminum chloride, and is dispersed in water, ether, and ethylene glycol.
It also has good aeration and stirring and foaming effects in food. It has a good stabilizing effect on certain oil crystals. Uses: Tween has a wide range of applications in the food industry. It can be used as an emulsifier, stabilizer and dispersant in baked goods for bread, cakes, ice cream and shortening.
Commonly used emulsifiers in vegetable protein milk beverages are sucrose esters and monoglycerides, Span, Tween, and lecithin. Usually two or more emulsifiers are used in combination, so the effect is better than when used alone. The amount of emulsifier added is generally about 12% of the amount of fat.
