Cyclodextrin (CD) is a cyclic oligosaccharide obtained by the degradation of starch in the presence of cyclodextrin glycosyltransferase and is formed from D-(+)-glucopyranose linked end-to-end by an α-1,4-glycosidic bond. Depending on the number of constituent glucopyrans, they can be classified as α-, β- and γ-cyclodextrins, possessing 6, 7 and 8 glucose units respectively (as shown in formula 2-4). Cyclodextrins have a conical barrel-shaped chemical structure with the structural formula shown in formula 5 (in formula 5, p = 6 for α-cyclodextrins, n = 7 for β-cyclodextrins and n = 8 for γ-cyclodextrins) and have hydrophobic cavities, thus allowing them to form complexes with hydrophobic molecules of a specific structural size, thus improving the stability and water solubility of fat-soluble substances and thus serving as fat-soluble drug carriers, food additives and cosmetic fillers in Industrial technology.
