The basic structure of oat beta-glucan is a linear polysaccharide composed of D-glucose linked by beta1-4 and beta1-3 glycosidic bonds, with a roughly 7:3 ratio between the two.

Oat beta-glucan is a water-soluble dietary fiber. Because of its viscosity, it blocks the digestion and absorption of starch, protein and other substances, so it can have some extremely beneficial physiological functions for the human body: it has significant ability to lower blood lipid, lower blood sugar and improve the immunity, and maintain the intestinal microecological environment.

In 2004, it was approved by the Food and Drug Administration to label barley and oat beta-glucan products with the following statement: "The intake of 0.75 g of barley (oat) beta-glucan per serving significantly reduces blood LDL-cholesterol and the risk of coronary heart disease.
