When the gluten powder absorbs water, it forms a wet gluten with a network structure, which has good viscoelasticity, extensibility, heat coagulation, emulsification, and film formability, such as gluten, baked gluten, mildew gluten, ancient meat, vegetarian sausage, vegetarian chicken, vegetarian duck, oil gluten and so on in traditional products.
