Alpha-cyclodextrin is a non-reducing cyclic carbohydrate consisting of six glucose units linked by an alpha-1.4 bond. It is produced by the action of cyclodextrin glucosyltransferase on hydrolyzed starch syrup. Alpha-cyclodextrin has a smaller cavity than beta-cyclodextrin, so it is used to form inclusion complexes of small molecules. The solubility of α-cyclodextrin in water at 25°C is 14.5 g/100ml, so a high solubility of cyclodextrin is required.
