Disodium 5'-inosinate (IMP) is a nucleotide food freshness enhancer, which is widely found in all kinds of fresh meat and seafood in nature. It has a stable and long-lasting taste and is relatively cheap. Chemicalbook is often mixed with sodium glutamate (monosodium glutamate). Mixed with 5'-guanylate disodium (GMP) in equal proportions, it becomes 5'-flavor nucleotide disodium (I plus G), and the freshness-enhancing effect is more significant.
