Product Description
Chitosan is the second most abundant biopolymer in nature after cellulose. It is widely distributed. It is mainly distributed in the shells of many lower animals, especially arthropods such as shrimps, crabs, insects, etc., as well as lower plants. Such as in the cell walls of bacteria, algae and fungi. Chitosan can be prepared by removing the acetyl group from chitin. Under the conditions of 100°C and 40% NaOH, the effect on chitin will produce a deacetylation reaction to obtain chitosan. This is a white or off-white translucent flake solid, insoluble in water and alkali, but soluble in most dilute acids, including  acetic acid . The molecular structure of chitosan is similar to that of cellulose, except that an amino group (-NH2) is attached to the C2 position. Therefore, it has an affinity for the fibers in the paper and develops into an ionic bond and a strong hydrogen bond. In addition, chitosan has good film-forming properties, which is beneficial to improve the surface strength of paper, so it becomes one of the strengthening agents for special paper. Chitosan is in powder form, tasteless and odorless, and its aqueous solution is a bit spicy. Chitosan is added to food, and the structure is not changed after soup boiling, frying, baking and other heating treatments are performed to a certain extent. Under the protection of nitrogen, it will not decompose when heated to 250°C.
Application 

Thickener, stabilizer, gelling agent, binder. It is also used to prevent mildew from acidic substances and can form a transparent semi-permeable membrane on the surface. Used in pickled products, bakery products, bread, oily foods, etc.
